Whether this is true or not, his knowledge is second-to-none, and his quality control impeccable. There's also a welcome emphasis on sustainability, so you can shop guilt-free. If you don't have any particular recipe planned, just ask him what's good today, and he'll point you in the direction of something wildly fresh.
